Job Overview

The Westin Cape Town is seeking an experienced Executive Sous Chef to support the Executive Chef in managing the full kitchen operation. The role requires strong leadership, culinary expertise, and the ability to maintain 5-star standards in a high-pressure environment. The successful candidate will play a key role in delivering exceptional dining experiences while ensuring operational efficiency.


Key Responsibilities

  • Assist in managing the entire kitchen operation
  • Develop and implement menus based on trends and customer preferences
  • Ensure compliance with standardized recipes and procedures
  • Act as Executive Chef in their absence
  • Manage food costs, labour, and kitchen resources to meet financial targets
  • Maintain high standards of hygiene, health, and safety
  • Lead recruitment, training, and performance management of kitchen staff
  • Handle staff scheduling, payroll inputs, and inventory control
  • Oversee food ordering, stock levels, and quality assurance
  • Address guest and staff concerns professionally
  • Manage catering functions and special events
  • Ensure consistent delivery of 5-star food quality and presentation

Qualifications

Education

  • Recognised Culinary Diploma or equivalent qualification

Experience

  • Minimum 4 years’ experience in a similar role
  • Experience in a 5-star hotel environment (advantageous)
  • Proven experience managing kitchen operations and staff
  • Experience in IR and disciplinary processes

Skills

  • Strong leadership and team management abilities
  • Excellent planning, delegation, and organizational skills
  • Financial management and cost control expertise
  • Proficiency in Microsoft Office (Word, Excel, Email)
  • Strong administrative and inventory management skills
  • Ability to work under pressure in a fast-paced environment
  • Excellent communication and problem-solving skills
