Executive Chef – Protea Hotel Johannesburg Wanderers

About the Role
As the Executive Chef, you will be the driving force behind the kitchen’s success, managing daily operations and guiding a dynamic team of culinary professionals. Your leadership will ensure consistent production of high-quality food across all outlets, including banquets, restaurants, room service, and employee cafeterias. You will maintain exceptional sanitation and food safety standards, while managing resources, costs, and staff development.
Key Responsibilities
Leadership & Team Management

Lead and mentor the kitchen management team and staff, fostering a collaborative and motivated work environment.

Set clear performance expectations, provide feedback, and encourage ongoing development.

Serve as a role model, demonstrating professionalism and integrity.

Ensure appropriate staffing levels that meet guest service and operational requirements.
Operational Excellence

Oversee all kitchen activities, including food preparation, purchasing, receiving, and storage.

Manage budgets, control food costs, and optimize resources to maximize financial performance.

Develop and implement safety and sanitation protocols, ensuring compliance with brand and legal standards.

Innovate menus and presentations to delight guests and stay ahead of culinary trends.
Customer Service & Quality Assurance

Maintain a strong focus on guest satisfaction by monitoring product quality and service levels.

Engage with guests to gather feedback and promptly address concerns.

Empower the team to deliver exemplary service consistently.
Human Resource Management

Identify training needs and coach kitchen associates to improve skills and knowledge.

Conduct performance appraisals and manage employee relations following company policies.

Collaborate with banquet and catering teams to ensure food knowledge and menu coherence.
Candidate Profile
Education & Experience
-
Minimum of 6 years’ experience in culinary, food, and beverage management or related fields.

High school diploma/GED required; a 2-year degree in Culinary Arts, Hotel & Restaurant Management, or related discipline preferred.
Skills & Competencies
-
Strong leadership and interpersonal communication skills.

Ability to multitask, plan strategically, and manage budgets effectively.

Knowledge of modern cooking techniques and kitchen equipment.

Commitment to maintaining high safety and sanitation standards.
Desirable Attributes

Certification in management or related qualification.

Proficiency in Microsoft Office (Word, Excel, Outlook).
