Job Summary
The Executive Sous Chef plays a critical leadership role, supporting the Executive Chef in maintaining the highest standards of kitchen operations, culinary creativity, and guest satisfaction. You will lead the kitchen team, ensuring food quality, hygiene, and presentation exceed luxury resort expectations.
You will also manage inventory, oversee food ordering, conduct training, and assist in maintaining smooth kitchen operations aligned with One&Only’s prestigious brand standards.
Key Responsibilities

Lead and mentor kitchen staff to ensure compliance with One&Only’s culinary standards and hospitality values.

Ensure consistent quality and presentation of all dishes served in the resort’s outlets.

Follow and improve HACCP standards and ensure strict compliance with all hygiene protocols.

Assist the Executive Chef in kitchen management, including ordering, inventory control, and cost management.

Create new menu items and innovate to enhance guest dining experiences.

Coordinate mise-en-place preparation and oversee daily kitchen briefings.

Handle guest requests and complaints professionally and promptly.

Conduct performance reviews and support staff recruitment.

Maintain kitchen equipment and ensure safe, clean, and organized work environments.

Attend departmental and resort meetings to stay updated on operations and initiatives.

Drive kitchen team performance to meet financial and operational targets.

Ensure compliance with company policies, including health and safety and resort procedures.
Requirements
-
Culinary Diploma with a minimum of 10 years’ experience in kitchen management.

Proven work experience in various cuisines and kitchen setups (banquets, main kitchen, outlet kitchens).

Previous experience in a 5-star hotel or luxury resort environment.

Intermediate HACCP certification.

Strong leadership skills with the ability to motivate and develop kitchen teams.

Intermediate computer literacy.

Fluent in English (written and spoken).

Completion of a leadership program or equivalent training is advantageous.

Excellent communication and interpersonal skills.

Ability to work under pressure in a fast-paced environment.
