ANEW Hotel Hilton in Pietermaritzburg is looking for a Kitchen Manager to lead culinary operations and ensure exceptional dining experiences. This role focuses on food quality, safety standards, staff development, and operational efficiency. The ideal candidate will bring strong leadership, a passion for cuisine, and a deep understanding of cost control and kitchen workflow.
β Minimum Requirements

Diploma in Professional Cookery (completed)

Minimum 5 years of experience as a Head Chef, Sous Chef, or Kitchen Manager
-
Solid knowledge of food cost, menu planning, and plus point systems

Proven leadership and communication abilities

Strong background in conferencing and event catering
-
Experience in staff coaching, mentoring, and performance management
-
Sound understanding of HACCP, health, and safety regulations

Lead, train, and schedule kitchen staff

Evaluate staff performance and support growth

Promote collaboration and team engagement

Handle disciplinary procedures when necessary
π½οΈ Operations & Quality Control

Oversee food preparation and presentation standards

Ensure compliance with hygiene and safety protocols

Coordinate with F&B and restaurant teams for service flow

Enforce standard operating procedures and brand guidelines
π¦ Inventory & Budgeting

Manage stock levels, procurement, and vendor relations

Control kitchen expenses and optimize resource usage

Track food costs and implement waste-reduction strategies
π§Ό Sanitation & Safety

Monitor cleanliness and implement food safety systems

Conduct internal inspections and audits

Maintain kitchen equipment and oversee maintenance schedules
π¬ Communication & Collaboration

Liaise with front-of-house, vendors, and senior management

Assist with planning and execution of events and functions

Participate in hotel-wide meetings and strategic discussions
π Menu & Innovation

Introduce new dishes, techniques, and trends

Develop cost-effective and dietary-compliant menus

Maintain accurate recipe specifications and documentation

Prepare kitchen performance reports and maintain documentation

Monitor kitchen labor costs and productivity
